Chewy Coconut Macaroons

Elsie’s Macaroons

3 cups sweetened flaked coconut (I like to buy my coconut at the Bulk Barn)
1/2 cup all-purpose flour
1/4 teaspoon salt
1 can sweetened condensed milk
1 teaspoon vanilla

Preheat oven to 325 degrees

In large bowl, combine coconut, flour, and salt. Stir in milk and vanilla.

Drop by teaspoon onto a greased or parchment-lined cookie sheet.

Bake for 12 minutes or until edges are golden brown, better to slightly under bake.

Cool on cookie sheet for a few minutes, then transfer to wax paper or racks to cool completely.

Dip into melted milk chocolate wafers, let set.

Makes approximately 2 dozen cookies depending how big you make them.

Alternative: Instead of the chocolate, decorate with a piece of cherry before baking.
